Husk Rum is about provenance and a sense of place, connecting us to this land and its elements - the salt sea air, fertile volcanic soil and pristine waters. From the Gondwana rainforests and mountains of the caldera, to the surf, sand and rocky headlands of the coast, Husk Rum reflects the environment and lifestyle of the North Coast of NSW.
Since 2012, Husk has pioneered a new style of Australian rum - made from fresh cane juice, grown onsite at Husk Farm Distillery.
All Husk spirits are made from part, or all, farm to bottle cane juice. The most rare and special rums carry the mark of ACR (Australian Cultivated Rum). This stamp is a guarantee of quality, integrity and authenticity - pure, single rums made from 100% single estate cane juice, non-chill filtered and with no added flavours, colours or sweeteners.

The Concept
The idea of marrying rum distillation with gin-style botanicals first came to Paul in the little green shed back in 2016. He was making both and there seemed no reason why some sort of spiritual matrimony couldn’t occur.
Experimentation using lemon myrtle and macadamias plucked (and roasted) from the tree outside convinced him it was a winner. But then events took over with the building of the new distillery and the concept was put on hold.
Fast forward to 2019 and Quentin's hand-picked and adventurous distilling team dusted off the distillery record books and took up the challenge to turn this idea into a new concept in rum. This was a big deal. This would challenge people’s perception of white rum. Had it ever been done before? Nobody knew. But what was known was that it had to be great. So it was that it took 89 micro-distillation test trials using a wide variety of botanicals before the recipe was finally unveiled.
How is it made?
The hard work is done first: growing the finest seasonal sugar cane, then crushing it, fermenting it and distilling it at Husk Farm, just the way all our cultivated rums begin. This cane based spirit is then re-distilled with a gin style cocktail of patiently hand peeling and sun-dried grapefruit peel, native lemon myrtle leaves and native strawberry gum leaves.
The result is HUSK BOTANIC, a full flavoured cane spirit base with botanicals layered through it, a sweet and zesty contemporary spirit that will challenge your perception of white rum and possibly even convert gin lovers to the rummier side of life.

Rum Stats
Age: 3 years and 11 months
Cane Variety: Q240 & Q244
Initial ageing: 2 years and 2 months in a mix of ex bourbon and ex Australian wine barrels.
Finish: 1 year and 9 months in ex aged Porter beer casks, that had previously contained Stone beer from Stone & Wood.
Tasting notes: The Porter Cask finish brings notes of dark chocolate, roasted coffee beans, malted barely and smoke.
Other comments: Porter Cask is from the same 2019 harvest as Husk Signature ACR and it is interesting to taste them side by side to better understand the Porter Cask finish contribution. At 46% ABV, some drinkers might like to add a little water to their glass if enjoyed neat.
The Story
Here’s how this incredible rum came to be. Stone & Wood, legends of the craft brewing world, create a traditional porter called Stone Beer. They use hot stones to caramelise the sugars in the wort, giving their beer a unique depth and complexity. We saw a golden opportunity there. Those porter barrels? Perfect for finishing our rum!
Several years later, Husk Porter ACR is finally ready. It’s made from 100% single estate cane juice, aged in Aussie wine barrels, and then given the royal treatment in Stone & Wood’s ex-Porter barrels.
The result? A rum that's like a liquid symphony of caramel, roasted malt, and dark chocolate. You’ll get toffee, vanilla, and a cheeky hint of smokiness dancing on your palate. Talk about a winter warmer!
As our Head Distiller, Quentin Brival, puts it: “The stone beer technique adds a layer of complexity and richness to our rum, creating a truly unique and exceptional spirit.”
And here’s what Coalan Vaughan, the Head Brewer at Stone & Wood, has to say: “It just made sense to collaborate with Husk on this release, as they’re only 15 minutes from our Murwillumbah brewery. Our Stone Beer porter, with its traditional brewing process, has imparted deep caramel and roasted malt notes to the rum, resulting in a wonderfully balanced and flavourful spirit.”

Our Story
"What does a fella do when he’s planted his crop to make the country’s first cane juice rum, but knows that the whole project will take years? He decides to make a gin of course.
Being a complete unknown in a world of international industrial scale gin producers, Paul Messenger knew he had to do something truly different in his little tin shed in Northern NSW. He set out on a journey of botanical exploration and discovered an exotic flowering legume growing wild in tropical Australia and South East Asia, popular in Thailand and used for centuries in herbal teas and traditional medicine. The flower was the butterfly pea, clitorea ternatea. In 2011 he bought 5 seeds for $5, planted them in the backyard and a few months later picked enough flowers to start trial infusions.
It was all a giant experiment and the eureka moment came when he discovered that butterfly pea infused gin changed colour from inky blue to pink when mixed with, of all things, tonic water. That flower would go on to become the hero botanical of the gin, and the name of course, was to be Ink Gin.
Being a disrupter is a risky business and he knew that the gin would have to be very, very good. It took three long years to develop the recipe, but by 2014 the final botanical blend was settled. It featured twelve other native, traditional & exotic botanicals that worked in perfect harmony with the flower.
They were about to turn the most traditional spirit upside down. The recipe was locked, the gin looked gorgeous, and tasted great with bold citrus notes of lemon myrtle and sweet orange, warm pepper berry and soft pea blossom hugging everything together. And to cap it all the stunning deep indigo blue mixed to blush pink with the addition of tonic. But the colour was an outrage. In a world of multi-national clear gin brands the family team bottled it up and in 2015 prepared to roll the dice with their first creation - a gin that looked and tasted very different to all the other gins on the market.
A year later and Ink Gin became Australia’s most loved craft gin. For the burgeoning worldwide craft gin industry the creative shackles were tossed asunder, and there followed an exuberant and high spirited explosion of unfettered coloured gin.

Ink Sloe & Berry Gin 700ml
Floral Infused Australian Sloe & Berry Gin

Ink Sloe & Berry Gin is an antipodean take on the classic English sloe gin recipe.
The base gin was distilled with some of Ink Gin’s star players - juniper berry, coriander, angelica and liquorice root. The flavour base continues to build with a tart infusion of sloe berries (actually a fruit) and this tartness is balanced by an explosion of sweet red berries.
The final ingredient in Ink Sloe and Berry Gin is Australian rosella flowers. Growing wild on the fringes of tropical rainforest of northern Australia, rosellas are a type of hibiscus flower. They have a vibrant colour and a crisp, tart flavour to balance the sweeter botanicals in Sloe & Berry.
Sitting at the traditional Sloe Gin strength of 26% alcohol, Ink Sloe & Berry is a refreshing lower strength “Drink Less - Enjoy More” option - perfect for sipping on the rocks.
