“IF YOU COULD MAKE WHISKY YOUR WAY, USING THE BEST EQUIPMENT IN THE PERFECT LOCATION, HOW WOULD YOU DO IT?”
This was the question Tim Polmear (co-founder) posed to his brother Rob Polmear (ex-Lark Distillery Head of Production & Overeem Whisky Head Distiller) around the fire, whisky in hand, in early 2017.
That very night sparked the vision for what we, Tim, Rob and Bec Polmear, have now brought to life as Waubs Harbour Whisky; maritime Tasmanian single malt whisky made our way.
From that defining night around the fire, the vision became clear. Our Tasmanian heritage, our deep personal connection with the ocean, our natural resourcefulness and experience with crafting single malt whisky collided. We knew what we were meant to create.

Matured in: American Oak ex-Bourbon casks married with ex-Tawny Port casks.
Distilled and matured at Waubs Harbour Distillery on the far east coast of Tasmania, Australia, just metres from the ocean and covered in salty air.
The Waubs Original was made using American Oak ex-Bourbon casks to highlight the Waubs maritime salted toffee characters but also has a layer of French Oak ex-Tawny Port cask for a creamy raisin and butterscotch finish.
Tasting Notes
Nose
Delicate sweet spices, there's a salty mineral element that only enhances the toffee.
Palate
Big toffee sweetness but the saltiness cuts through to balance it perfectly. That salty character addition enables the malt and the cask influence to really shine, biscuit, creamed apples, light florals and nectar. Rounded and developing into a nice deep raisin syrup finish. Evolving and complex especially for a 43%.
Finish
Just yum, you get that tawny butter in the back palate and more caramel butterscotch up front, almost like cookie dough.

Matured in: Rich ex-Tawny Port French Oak casks married with American Oak ex-Bourban casks.
Distilled and matured at Waubs Harbour Distillery on the far east coast of Tasmania, Australia, just metres from the ocean and covered in salty air.
Rich ex-tawny French Oak casks balanced with American Oak casks. Notes of poached pear and sultana, brown sugar syrup layered with hot custard. At 48%, the salty brininess amplifies and balances the sweetness while adding complexity to the oak.
Tasting Notes
Nose
Sultana spiced jam meets rust. Heaps of vanilla, moving to toffee spices in the middle. Apply brandy, custard. Hot custard over a syrup of poached pear plump sultanas, and a glazed cherry drizzle on top of that cream.
Palate
Rich sultana and pear crumble sweetened butter, heaps of treacle, golden syrup mixed with dried stone fruit. Oak integration build up the supportive pantry spices and adds length while the 48% keeps it big oily and rich.
Finish
Lingering butter melted prune/sultana syrup. A touch of ex-Bourbon brings complexity to the spice profile. Great length.

Distilled and matured at Waubs Harbour Distillery on the far east coast of Tasmania, Australia, just metres from the ocean and covered in salty air. Our most premium of releases with bottle #01 auctioned off for $4800.
Our highest quality ex-tawny port casks as rated by our head distiller reserved to be bottled at cask strength of 62%. The high strength retains oils and intense flavour. Big sultana port notes with a little chocolate and long salted caramel finish.
Tasting Notes
Nose
Whipped cream and maple syrup over pancakes, dried apricots and rich sultanas.
Palate
Big juicy oily malt. Very warm but expected at 62%. Sticky date pudding like with a hint of choc and waffle cone.
Finish
Hints of ginger and wood transition to coffee grounds and leave you with a long gooey salted caramel finish.
Waubs Harbour Limited Release Great Southern Reef
ABV: 43%

Matured in: Apera Sherry casks, finished in 40 year Tawny Port cask
This maritime single malt whisky is a Limited Release in support of the Great Southern Reef Foundation.
Made, matured & bottled at Waubs Harbour Distillery on the east coast of Tasmania, just metres from the ocean and covered in salty air.
This Limited Release of only 591 bottles was matured in ex-Apera Sherry casks and finished in 40 year old ex-Tawny Port casks from Murray Street, bringing a lovely salted caramel backbone, enhanced by the Apera stewed fruits, with a complexity and depth that only an aged fortified can provide.
Bottled at 43% ABV and never to be repeated. Available in Australia only.
The Great Southern Reef Foundation are an incredibly passionate team who are raising awareness and stewardship of the interconnected system of reef that stretches around southern Australia and Tasmania and partner with local organisations to fight against the impact of climate change.
Tasting Notes
Nose
Apple, apricot, pear, brown wood sugars and kitchen spices. An apricot danish meets an almond croissant. Complex and evolving.
Palate
A salted caramel backbone and a balance of sweet buttery stone fruits from the Apera cask with that old Tawny treacle.
Finish
A lingering finish of lovely sweet, apple, pear, sultana and treacle overlay.
