2026 Release
"Nick and I invite you to sit back and relax—preferably with a good glass of wine—and reflect on the highlights of your past year while I share a few of ours.
Every vintage, we focus on producing the best wines possible from the grapes and season in front of us. We don’t make wine for judges or awards, nor do we enter wine shows. That being said, validation from wine critics is always rewarding. We knew our 2025 release was strong and the tasting team at James Suckling reaffirmed it when they named our 2025 Fiano (#33) and 2024 Georgia’s Paddock Shiraz (#3) to their Top 100 Wines of Australia. To top it off, the Georgia’s Paddock Shiraz made their Top 100 Wines of the World at #29. We are truly honoured to be included alongside such incredible wines.
Another highlight was joining Anna Webster, editor of the Halliday Wine Companion, on her podcast. Stepping outside my comfort zone was unnerving, but Anna was wonderful, and her team’s editing magic pulled it all together. If you’d like to listen, click here to listen to the podcast episode.
Adapting to change is part of life, and at Jasper Hill, we’ve made a couple of subtle tweaks over the past year:
I would first like to acknowledge Justin Hancock coming back to our small Jasper Hill team. Justin worked in our vineyards for close to a decade before moving on within the industry. We were fortunate to welcome Justin back last September and are grateful for his dedication to viticulture.
While we’ve always bought top-tier natural corks, we have now moved to Diam closures. Diam is a composite cork made of granulated natural cork treated with CO2 that is guaranteed to be 100% TCA-free. The bottle-to-bottle consistency regarding seal integrity and oxygen transmission made this an easy choice. After plenty of discussion between Ron, Nick, and myself, we’re all thrilled with the outcome.
Given our changing climate and increasingly extreme weather events, we have made the difficult decision to place irrigation lines in our Emily’s Paddock. Since inception we have taken pride in growing organically and without irrigation so this has not been an easy decision to make. It will provide us the option to give the vines a vital drink of water during any potential future heatwaves. We aren’t irrigating to increase berry size or dilute flavour—our goal is simply to keep our vines healthy for generations to come.
Finally, we warmly invite you to our Open Weekend at the cellar door on August 29th and 30th, 10am – 5pm. We’ll be pouring our new releases alongside select museum wines from our personal cellar. Delicious finger food will be provided by the talented Nick and Sonia Anthony (formerly of the hatted regional Bendigo restaurant Masons). As always, pack a warm coat — the weather out here can be unpredictable!"
- Cheers, Emily and Nick
2025 Georgia’s Paddock Shiraz

Georgia’s Paddock Shiraz is approximately half of our entire production. We pick many tanks across several weeks; this allows us the comfort of harvesting some early, the bulk when optimal and letting a little hang at the riper end of the flavour spectrum. Each tank is fermented, pressed and kept in oak separately until blending. The result is complex, fresh red fruits upfront while layers of spice and chalky tannins follow to build weight. Once again vibrant and approachable now, yet with all the building blocks to cellar with confidence.

2025 Emily’s Paddock Shiraz/Cabernet Franc

Predominately Shiraz, this full bodied wine is given added dimension by a small yet impactful 7% addition of Cabernet Franc. Picked and co-fermented, the result offers lifted red fruits with an earthly structure from the soil in which it is grown. Initially the tannins appear green; however, they give lift and freshness to the palate, allowing the herbal notes to shine. It is looking good now, but we are excited to see how it will be drinking in another few years.

2025 Georgia’s Paddock Nebbiolo

A classic burst of rose on the nose sets the stage for our 2025 Heathcote Nebbiolo. Bright and floral it’s packed with dark cherry and ripe red currant notes. You'll see plenty of bold, firm tannins that build, wrapping up with a delicious hit of oak spice and smoky flint.

2026 Georgia’s Paddock Riesling

A polar opposite wine to the 2025, this Riesling shows that no two vintages are the same. While also picked early, this naturally fermented Riesling sits in the off dry category. Still very much in the lemon-citrus wheelhouse and carrying plenty of natural acidity, the residual sugar allows for a generous mouth feel and palate weight.

2025 Occam’s Razor Shiraz

Harvested early to produce a fresh, vibrant Shiraz that can be enjoyed young. Purchased fruit from two Heathcote vineyards, with distinctly different soil profiles, contribute savoury elements that complement the core base of red fruit. Bright purple in colour, it displays velvety notes of spice and raspberry, true to form with hints of cola and smoked meats.

2026 Lo Stesso Fiano

A blend of 50% estate-grown and 50% regional fruit, fermented in a mix of new French oak and stainless steel. This Fiano has a flinty minerality on the nose with ripe pears and custard apple. A dry wine that will lend itself well to food, featuring a palate of pithy grapefruit, almond kernel with punchy acidity and chewy textures.
