2021 RAINBOW JUICE
A new direction for Rainbow Juice from this release onward but with the same philosophy at its core; loads of skin contact, juicy acidity and aromatic deliciousness.
Style: Aromatic crunchiness. Drink: Slight chill, drink now.
Varieties: Pinot Gris, Gewürztraminer, Sauvignon, Pinot noir, Chardonnay, Merlot, Syrah and Riesling.
Source: Various cool climate sites in Summertown, Ashton, Norton Summit, Woodside and Charleston.
Farming: Organic.
Winemaking: The majority is a cofermentation/maceration of Pinot Gris and Gewurztraminer for six days before pressing to stainless steel. There's also a separate rolling ferment of Sauvignon, Chardonnay and Riesling that spends a few weeks on skins before pressing to old oak. After five months the wines is blended and finally, some red pressings are added to give some colour and boom, Rainbow Juice is born.
2021 Vin de Sofa
It’s the super lively fruit plus the crunch that makes this one so moreish. If ‘vin de soif’ means easy drinking then where better than the couch!
Style: Crunchy fruits, puckering acidity.
Drink: Room temperature, drink now.
Varieties: Sangiovese, Pinot Noir, Syrah.
Source: Cool climate sites in Charleston and Norton Summit.
Farming: Organic with some biodynamic practices at Norton Summit.
Winemaking: The varieties were fermented separately; Sangiovese was destemmed and fermented three to six weeks before being pressed to a mixture of stainless steel and neutral French oak barriques; The Pinot Noir was 100% whole bunch fermented and pressed after 21 days, aged in stainless steel. The Syrah was fermented for two weeks (20% whole bunch) before being pressed and aged in neutral French oak puncheons. The wine was bottled five months after blending.
