Wine Making Overview: adapted to each site and parcel, spontaneous fermentation and ageing in tank for early drinking wines and ageing in oak (mostly used) for 12-18 months for top whites and reds, some going back into tank for additional 12 months on fine lees before bottling. Some given extra ageing in bottle before release.
Viticulture: Certified organic; in conversion to bio-dynamic.
