Winemaker, Andrew Marks (Gembrook Hill, Wanderer wines) has been toiling away on his alembic still making hand-crafted, batch distilled gin at his home in the Yarra Valley. Each of the 11 botanicals used is individually distilled, then blended to recipe. (Juniper berries, coriander seed, grapefruit peel, rosemary, macadamia, sandlewood, honey lemon myrtle, organic navel orange, angelica root, orris root and cassia bark)
Gembrook rainwater is used to break the gin back and the final gin is not chill filtered to retain all the natural oils* (this may throw a natural haze or “louche” if super cold)
Each bottle is numbered to reflect the small batch production runs.
